Eggless Plum Cake Recipe Must have cake for Christmas Eve

Well, well, the festive season is on Christmas and New Year is knocking on our doors, So here I am with Plum Cake Recipe and more!

Christmas demands sweets and cakes and the most popular one is the Plum Cake.

Am I right?

Well, yes I know I'm right, and the audience will agree too why? Because it's a fact that " Plum Cake equals to Christmas Eve". 

1. What Is A Plum Cake?

Plum Cakes belongs to England and now we can say that it is made with different ingredients around the globe.
Some of the families like it to be baked with nuts and fruits soaked either in rum or brandy and there are families that go with no alcohol recipe. These plum cakes show up in trending near the Christmas Vacation and it leaves behind its different yet delicious taste in mind.

2. Let's Bake Eggless This Time

To be honest, the preparation of this Christmas Season Cake begins months or even years before by soaking the desired dried nuts in rum or brandy just to enhance its flavour but, nowadays who remembers this preparatory task? No one I guess, and so, Baker Shivesh Bhatia is here with a cheat method of baking this Plum Cake. Here, according to the recipe, you need to soak dried apricots, raisins, and more nuts of your choice in orange juice, lemon juice along some water, why? To make the nuts filled with flavours for the cake. Originally this cake also includes eggs but this time bake it without the eggs, simply by replacing the eggs with yoghurt. This step is done only to make the cake soft and fluffy and be rich in texture and taste.

 

3. Let's See The Ingredients Needed:-

A. For The Cake

  1. One and a half Cups of Maida
  2. One-Fourth Teaspoon of Cinnamon
  3. One-Eighth Teaspoon of Ginger and Clove
  4. One Teaspoon of Orange Zest
  5. One Teaspoon of Baking Powder
  6. Half Teaspoon of Baking Soda
  7. Half Cup of Vegetable Oil
  8. Three Fourth Cup of Brown Sugar
  9. One Cup of Yogurt
  10. One Teaspoon of Vanilla Extract

B. To Soak

  1. One-Third Cup of Orange Juice
  2. One-Third Cup of Water
  3. One Tablespoon of Lemon Juice
  4. One Cup of Tutti Frutti
  5. One-Fourth cup of Raisins
  6. One-Fourth Cup of Dried Apricots
  7. One-Eighth Cup of Cranberries and Prunes

C. For the Folding

  1. One-Fourth Cup of:
      a. Almonds
      b. Walnuts
      c. Cashews
      Done with the ingredients and now let's note the method.

 

How To Bake:-

1. Take a saucepan and add orange juice, lemon juice, and water.
2. Now add all the dried nuts like apricots, raisins, and more in the pan and make it cook until it thickens well.
Why we are doing this?
Well, as we have not soaked our nuts prior to the cake, so this is a cheat method to make the nuts taste like the pre-soaked nuts, it basically enhances the taste and fills the nuts with flavours.
3. Keep the oven to pre-heat at 160°C, place with a baking tray with parchment paper.
4. Take another bowl and add maida, baking powder, baking soda, orange zest, and all the species and whisk them well and keep it aside.
Need For The Species:
The Winter season demands some exotic textures and tastes and brings in flavours of warmth and comfort to these species are added.
5. Now in another bowl add yoghurt and oil along with sugar and mix them well and also add the vanilla extract.
6. Now, mix the dry ingredients with the yoghurt mixture and while mixing make sure no lumps are formed and prepare the batter smooth and easy.
7. Keeping some soaked nuts aside, add in some of it with the chopped almonds, walnuts, and cashews to the batter and give it a mix.
8. Pour the prepared batter in the baking tray placed to pre-heat.
9. Bake the cake for 50 to 55 minutes at 160°C or until when the skewer inserted in the center of the cake comes out neat.
10. The Plum Cake is here, top the cake with the portion of dried nuts kept.

 And ta-ta-daaa, it's Ready!

 

4. Precautions While Baking

1. Make sure your batter is lumps-free.
2. Don't overcook the dried nuts mixture.
3. Don't over mix the batter.
4. Don't forget to grease the baking tray or keep the parchment paper.
5. Keep an eye on the cake while it's in the oven, it's not mandatory to bake it for entire 50 or 55 minutes. Keep checking it by inserting the skewer in the cake and as soon as it comes out clean, the cake is ready to serve.
